This unique, honey-like quality is the result of an intricate interplay between the tea plant and a delicate insect known as the jassid. These tiny creatures selectively target pesticide-free tea bushes, their bite triggering the leaves to produce a natural sugar as a defence mechanism. Through the masters' meticulous harvesting, drying, and oxidation processes, this sweetness is exquisitely concentrated and enhanced.
